Fresquito: Bergen's liveliest place for Spanish flavours

With chefs from gastronomic powerhouse Cádiz, the new restaurant Fresquito delivers an explosion of authentic Spanish flavours – straight to your table.

Giovanni Sanchez answers quickly and firmly. De Bergenske's new restaurant  will have pure flavours.   

"We want to be a classic restaurant that takes you on a culinary journey through Spain, Portugal, and even into South America, and the Caribbean," says Giovanni. 

"Our menu is a tribute to that which is genuine and authentic. Every meal is an experience. Both in the case of meat and fish."  

The word 'pure' is mentioned again: 

"Say you have a scallop, then it should taste like the sea, but with a touch of the classic flavours from the countries I mentioned," the Chilean restauranteur says enthusiastically. 

The menu at Fresquito is inspired by the cuisine of Portugal, and Spain, as well as South America and the Caribbean.

Giovanni from Chile is a familiar face on the streets of Bergen and has been involved in launching multiple restaurants in the past. But Fresquito is the place he thinks really stands out. 

"This restaurant is for everyone who loves food and drink and genuine flavours. In addition, we naturally focus on good service." 

Fresquito is located in the centre of Bergen, with an entrance from Vågsallmenningen square and views of the Fish Market and the harbour, Vågen. The new restaurant is located right next door to the venerable and stunning Frescohallen at Bergen Børs Hotel.

"I have always been fond of this historic building, with its characteristic details and impressive façade. And now we have opened something new here for locals and visitors to this beautiful city. 

This is the tavern that Bergen has been missing."

Headhunted a top chef from Spain  

To secure a genuine experience, authenticity must also extend to the kitchen. De Bergenske has therefore hired Cristian Munoz, a chef who comes from a restaurant family in Cádiz, on the south coast of Spain. The city is known for its fresh seafood, and a culinary scene characterised by local specialities such as pescaíto frito (fried fish) and tapas bars. His culinary experience and knowledge of traditional dishes has now brought Cristian to the city surrounded by seven mountains. 

"I had heard his name in connection with restaurants in San Sebastián and elsewhere. The food Cristian makes is classic Spain, with pride. We're glad that he is ready to do something new and take part in new adventures with us here at Fresquito," says Giovanni. 

Fresquito opened its doors on February 1, 2024, and is open from Monday – Saturday 16:00 – 24:00.
